S'mores Tart Recipe


Summer days can often be made better by spending time outside and savoring fresh fruits. Summer nights equally can be more enjoyable with time spent outside, perhaps around a bonfire, savoring s'mores carefully cooked in the fire. Inspired by that classic treat we all loved as kids, I created the adult equivalent. Kick back in an adirondack chair with a mimosa and dig into this tart!


Ingredients:
Crust 
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/4 cup butter, melted

Marshmallow Layer
10 oz large marshmallows
2 tbsp butter

Chocolate Filling
1 1/2 cup semi-sweet mild chocolate
1 cup heavy whipping cream
1 tbsp butter

Steps:
1. Begin by preparing the crust. Crush the graham crackers as finely as possible. Combine sugar into the crumbs. Add the melted butter into the mix. Press the contents into a tart dish and let cool and harden in the refrigerator for 2+ hours.

2. In a pot, melt the marshmallows and butter on low heat on the stove top.  Once the crust is completely hardened, have it next to the stove. Turn the heat off and continue stirring the melted marshmallows to maintain a melted constancy that slightly hardens. I found this reduces the mix being absorbed into the crust. Pour the marshmallow onto the crust. Place back into the refrigerator and let sit for 2+ hours again.

3. Make the filling. Melt semi-sweet mild chocolate on stove top. Slowly incorporate the heavy whipping cream into the chocolate to make for a thicker ganache consistency. Add the butter, and mix in fully. Bring out the crust again and pour the chocolate ganache on top. Place back into the refrigerator for 5+ hours, or until solid.

4. For the decoration on top of the tart, broil mini marshmallows in the oven and they should come out perfectly golden. (May take a couple tries).
